This is a delicious soup that can be served as a main dish or as a starter to break the fast.
– 250 g boiled potatoes
– 50 g onions (or leeks), finely chopped
– 30 g butter
– 25 g flour
– 150 g fresh cream
– 2 stock cubes, chicken, or vegetables
– Salt & white pepper to taste
Method of preparation:
Fry the onions in butter until wilted Sift the flour over the onions and stir well. Gradually add water while continuously stirring Simmer the soup until it boils.
Mash the boiled potatoes then add them to the mixtures. Stir until the potatoes are well incorporated
Add the stock cubes and stir. Add salt & pepper to taste. Boil the soup for 5 minutes then add the fresh cream and serve immediately.
